SCHUMANN’S – MUNICH

Munich is in the German region of Bavaria. And that says a lot by itself. An ultra-rich, beautiful part of Germany, kind of conservative, but all the while one of the highest estimated parts of Germany in terms of culture, style and architecture.

In the very stylish city of Munich is a very stylish bar called Schumann’s. Upon entering, the first thing one notices is the modernist design lines throughout the space. A bar close to 10m long, in front of a 10m long row of shelves on a green marble wall. Shelves are obviously full of bottles, and on the top lies a shelf with just Campari bottles that reign over the rest. Probably the sponsor, but anyhow it looks great and is kind of a signature image for the place.

In the 60-page drink list, one comes across several cocktails that are Charles Schumann’s (the bar’s founder) own creations. There is also an extensive wine list and several dishes to order along with your drinks.

The crowd is a mix of hip and trendy to business executives wearing 3k euro suits to everyday people. The staff is also a mix, from young mixologists with hipster beards, and older Bavarian bartenders who never smile unless they want to make fun of you, which they do and are usually right, since they know best.

Having been to Scotland recently for a concert, we thought we’d order a malt whiskey. We were subtly reprimanded by the bartender for asking too many questions and not being able to pronounce the Gaelic brand names correctly, but it came and it was great.

 

And while finishing this drink, came Kostas, a Greek guy (seems like there is one everywhere after all) working in Schumann’s for almost 20 years. He knows everyone, is genuinely friendly to Greeks and non-Greeks alike, and holds a senior position equally divided between bartending and socializing.

Seeing we had ordered malt he showed us photos of the whiskey barrels he bought during his last trip to the Highlands. These stay at the distillery in Scotland, and he receives some bottles every year, which he generously offers to friends, following his what-else-is-there-to-do mentality.

He suggested a next round of a peaty malt whiskey. ‘These are the ones matured in smoked barrels’ we were informed, and, being clueless, we asked for the peatiest of them all. He served us two glasses of Octomore, accompanied by two super cold 33cl Guinness, which proved to be extremely fitting to wash your mouth before the next sip of this delicious super strong, bitter and salty malt.

We stayed for a couple of hours, got sufficiently drunk while talking with Kostas about the purpose of life, and made friends even with even the old Bavarian bartender. We are sure to return in our next trip.

Umar Fisch – Vienna

Naschmarkt is one of the places you need to visit when in Vienna. It’s a market with three rows of restaurants, wine bars and deli shops with a very cool and friendly ambience, and reasonable prices. Plus, most eateries stay open until late which is really convenient, especially for Mediterranean people like us, who are used to eating late dinners.

We arrived in Vienna around 9pm on a Tuesday night, after a very long drive. After 6 shows in a row we really felt we deserved some proper food, and booked a place that seemed nice but, when we got there, it looked really miserable, so we decided to look elsewhere.

Umar’s seafood restaurant appeared like an oasis in a desert. We were immediately seated by very friendly staff, kind enough to answer all our clueless visitor questions.

The appetizers we chose were a variety of fish tartars (tuna, salmon and sea bass) accompanied by a Wakame (japanese seaweed) salad, and a tuna Carpaccio sprinkled with Parmesan flakes and rocket leaves. The Carpaccio was very tender, and each tartar had a very distinctive taste, especially the sea bass, with its pickle and capers seasoning.  Plus they were really nicely presented on a huge platter.

As a main dish we tried a shrimp risotto, which, despite its generous quantities of cream and Parmesan remained delicate and tasteful, which is, more or less, what you want a risotto to be, if you’re honest with yourself.  No2 were grilled scones over a lentil salad flavoured with cumin. Tasty. No3, a fried sole, really fresh and not oily when served, accompanied by a spinach and leek salad. And, finally, a grilled sea bream with a boiled potato and spinach salad.

The wines Umar offers are mainly Rieslings and Green Veltliner (Grüner Veltliner). We chose the latter, which is an Austrian variety we didn’t know of, plus it was cheaper. We had two bottles, very good for its price.

Oh, and we also had a few oysters.

Overall, the quality of fish was excellent, all dishes were very decent, without any illusions of grandeur, and the personnel were very helpful and had just the right amount of humor.

TΟ FILARAKI (ΤΗΕ FRIEND) – VOLOS

If you were to be blindfolded and served what Apostolis, the owner of Filaraki has to offer, you would probably imagine a place with long waiting lists, snobbish receptionists and a pricey menu. Their raw material quality together with the wisdom of the course’s succession are definitely in the league of such a restaurant. However, as it’s not in NYC or London, but in Volos, a medium sized beautiful coastal city half way between Athens and Thessaloniki, things are much different.

Before we go into this place’s details, here’s a few tips on what a ‘tsipouradiko’ in Volos is all about. Tsipouro is a hard liquor made of distilled grapes, similar to the Italian grapa. And a ‘tsipouradiko’ is where you drink it. Very much like a tapas bar, only, when in a tsipouradiko, you don’t order the dishes. You just ask for a round of tsipouro and the side dishes come along with the drinks.

But here’s the clue: the content of each side dish depends on the level of tsipouro consumption. This means that, in the beginning you would get a few dips, fish cured in salt, and pickled vegetables, then maybe a few grilled pleurotus mushrooms (a kind of oyster mushroom very common in Greece), then some octopus, squid, or calamari, then some crustaceans, and finally grilled or fried fish.

Having reached your 4th glass of tsipouro, in most cases means that you have now earned the right to select the sides you wish from that point onwards. It is now your choice to repeat one of the previous sides, or opt for meat dishes, or fried cheese (saganaki in Greek) where available.

Or, you might be treated with something that remained secret up to that point. We were once served thinly sliced boiled ox tongue and, at another time an ultra – fresh whole grilled squid (ink included), rich as a rib – eye steak.

Mostra, deriving from the Italian verb ‘to show’ is an alternative order pattern. offered by some tsipouradika. In this case, a whole bottle of tsipouro is placed on your table, and side dishes arrive periodically, until you stop the order. ‘Mostra’ bottles are usually unlabeled, they are the owner’s choice among local tsipouro producers and usually each place has a limited selection either with or without anice.

Most tsipouradika are also open at night, although the traditional custom is to go for lunch and then back to work, since, especially in older times businesses would close between 2 and 5 in the afternoon. If at leisure, you may of course stay longer, sip and eat into oblivion.

There are numberless tsipouradika in every corner of the city, ranging from the older ones, such as Kavouras, to more modern such as Mezen which serves innovative mezedes made in an open kitchen, similar to a tapas bar.

So that’s a typical tsipouradiko experience. But the owner of ‘Ta Filarakia’, who happens to be the one out of a total of three people working at the place, takes it a notch further. A few of his innovative touches: fish is almost always grilled, whether or not it’s small or large. If you’re lucky, you’ll get a marinated and grilled mylokopi (the Greek equivalent of croaker fish). When serving shellfish, he gently passes them through vapor and adds a spoonful of lemon zest. And when it comes to crustaceans, he grills them to perfection and offers the best available. And if the day’s catch is not good enough he simply doesn’t serve any.

Like all true connoisseurs, he adds his personal mark without any pretentiousness or boast. On the contrary he is quite humble. So humble yourself before you enter his 20sq meter eating area with tables arranged in Tetris patterns, watch him work in his kitchen consisting of a grilling space, a few pots and a fridge, and get ready for simple and purely delicious seafood.
